Free high resolution photo of milk being scalded in a makeshift double boiler consisting of three glass mason jars in a big pot of boiling water. There is a candy thermometer measuring the temperature of the milk. To scald milk means to raise its temperature to 185 degrees Fahrenheit (85 Celsius) in order to kill certain bacteria. Since most milk is ultra pasteurized these days, scalding is a bit of a lost art form, but it is still useful for making home made yogurt.
